My sweetheart told me recently that Ben’s White chocolate and Ginger cookies were probably his all time favourite cookies. The gauntlet had been thrown down…..
It certainly sounded a really tempting flavour combo and it turns out it really is!
Happily I’ve recently discovered that you can buy keto white chocolate chips on line, which suddenly makes recipes like this within the realms of possibility. (My attempts at making sugar-free white chocolate from scratch in the past have been catastrophic :/ )
So here’s my low carb, minimal sugars version. There’s no flavour lost with these beauties - they got an enthusiastic seal of approval straightaway from James, as he tucked into a freshly baked batch still warm from the oven. But with these cookies you also get the healthy brownie points too. And…as if things couldn’t get even better….they take just a matter of minutes to make!
What's stopping you? Get the kettle on and get cooking!
*Natural sweetener options could include xylitol, erythritol, allulose. I used erythritol brown sugar replacement for this recipe. See Alternative Sweeteners page for more info. Each sweetener will have slightly different levels of sweetness. Adjust to taste.
Pre heat the oven Gas Mark 4/180C Cover a large baking sheet with baking paper. Mix the melted butter, cream cheese and vanilla essence together in a bowl. To chop the nuts put into a plastic bag and bash with a rolling pin. In a separate bowl, mix the almond flour, salt, sweetener, chopped nuts and keto white choc chips. Add the melted butter and cream cheese mix to the dry ingredients in 2 or 3 sloshes, mixing well in between each one. Finally get your hand in and give a final squidge and mix to make sure the dry and wet ingredients are well blended. Scoop out approx. a tablespoon sized dollop at a time, roll into a ball and flatten slightly on the baking tray - making a biscuit shape as best you can. Bake for approx. 10 mins until the cookies go golden at the edges. Remove from the oven and cool completely on a wire tray. Keep in a sealed container in the fridge.
